Steak Pizzaiola |
My dad was more of an eater than a cook. He made his "Heart Attack" Special egg concoction on Sunday mornings: cheese, ham, salami, and eggs swimming in butter... and occasionally he made Steak Pizzaiola. It stands out in my mind as a special dish because my dad made it, and it was steak. Italians are not big beef eaters...but marinated in tomato sauce, how bad could it be? My dad made whole steaks and baked them for a long time in the oven. I decided that chopping up the meat and making it in the crockpot was simpler. It tastes the same and you don't need a knife! PS: I refused to make my husband's father's famous dish "S.O.S." if any of you have parents that were in the military you probably know what this dish is... maybe another time if I can think of a way to make it taste good. (brown meat) 10 min
(if don’t brown meat) Serves: 6 - 8
Ingredients: 3 pounds of beef chuck cut into 1/2 inch pieces 1 cup of flour 3 tablespoons olive oil 1/2 cup dry red wine 8 chopped cloves of garlic 1 tablespoon of oregano 1 tablespoon of thyme 1 tablespoon of salt 1 tablespoon of black pepper 3 12 ounce cans of crushed tomatoes chunky style
Directions: In a large skillet heat oil on medium high. Salt meat and then flour it. Brown meat on all 4 sides. Approximately 2 minutes per side. Put browned pieces in the crockpot. When you are finished browning all of meat deglaze the pan with the wine. Scrap the brown off of the pan with a spatula and continue to scrap and cook the wine until it begins to get syrupy. Pour reduction over meat. Add all of the seasoning, garlic, and crushed tomatoes into the crockpot. Stir and cook on low for 8 hours or high for 4 hours. The dish is ready when the meat is tender. Check before serving if the sauce needs more salt. Serve over large pasta noodles like penne. Great with a side of salad and/or garlic bread. Copyright 2012
