Goat Cheese Stuffed Dates




High in fiber, high in calcium, low in fat... and I have the nerve to call these Goat Cheese Stuffed Dates appetizers... I mean come on, they are down right healthy.

But that's Greek food for you, it is tasty and healthy. My family and my waistline have been enjoying our Food of the World visit to Greece this month.
These stuffed dates are so simple to make you literally just throw some goat cheese, mint, lemon juice, olive oil and salt and pepper in a food processor and then stuffed the dates.

These are great for a summertime get together because you can leave them out in the heat for hours.
The contrast between the sweetness of the dates and the fresh citrus taste of lemon... with the surprise bright mouthfuls of mint; make this a perfect picnic treat.
Serve them with figs, and olives like I did. They are also great with apricots and hummus.


Goat Cheese Stuffed Dates

Ingredients: 2 ounces soft goat cheese 2 teaspoons fresh mint leaves minced 2 teaspoons lemon juice 4 teaspoons Extra-Virgin Olive Oil salt and pepper 12 Medjool Dates pitted

Directions: 1) Put all of the ingredients except the dates in a mini-food processor or a blender and mix until just blend. Check flavor for salt and pepper.
2) Put about teaspoon of the goat cheese mixture in each date. Any left over goat cheese spread on bread or dip with pita chips.
